Greek Chicken Drumsticks

These Greek-style chicken drumsticks are a simple, flavour-packed dinner that’s easy enough for a weeknight but tasty enough to serve a crowd. Made with fresh herbs, garlic, and a tangy yogurt and olive oil marinade, they’re perfect alongside roasted potatoes, a crisp salad, or a scoop of rice. A true family favourite — juicy, herby, and full of crispy bits.

Servings: 4–6
Prep Time (active): 15 minutes
Marinate Time (inactive): 1–6 hours
Cook Time: 25–30 minutes

Ingredients:

  • 3–4 lbs Central Park Farms chicken drumsticks (2 packs - 8 drumsticks)

  • ½ cup olive oil

  • Juice of 2 lemons

  • 4–5 garlic cloves, minced

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 1 tsp fresh rosemary, chopped

  • 1 tsp fresh oregano, chopped

  • ½ tsp Dijon mustard

  • ¼ cup Greek yogurt

  • Salt + pepper to taste

Instructions:

  1. Flip each drumstick and carefully cut along the bone to open them up slightly — like a mini butterfly. This helps them cook faster and gets more surface area crispy.

  2. In a bowl, whisk together olive oil, lemon juice, garlic (fresh + powdered), onion powder, herbs, mustard, yogurt, salt, and pepper.

  3. Add drumsticks to a dish, bowl or bag, pour the marinade over, and mix well. Let it sit at least 1 hour, or up to 6 hours.

  4. Grill or cook on a hot flat top until golden, crispy, and cooked through (internal temp of 165°F). Flip occasionally to get that even sear.

  5. Top with a drizzle of olive oil and a generous amount of fresh herbs, and service with extra lemon if desired.

    Pro-tip:

Serve with roasted potatoes, a simple salad, or rice.

This marinade works beautifully on all kinds of cuts: chicken breasts, thighs, half chickens, pork chops, or tenderloin.

Leftovers (if there are any!) are perfect for wraps with tzatziki, hummus, and fresh veggies!
