1 lb (450g) Central Park Farms spicy Italian sausage, casings removed

1/4 cup grated Parmesan cheese
Fresh basil, chopped
1 sheet puff pastry (store-bought or homemade) thawed according to package instructions
For the Jalapeño Cheddar Sausage Rolls:
1 lb (450g) Central Park Farms banger sausages, casings removed
1/2 cup sharp cheddar cheese, grated
1 fresh jalapeño, finely chopped (adjust to taste)
1 sheet puff pastry (store-bought or homemade) thawed according to package instructions
For Brushing:
1 egg, lightly beaten
Instructions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place one sheet of puff pastry on a lightly floured surface.
Along one edge of the pastry, spread a thin layer of pesto, then sprinkle with grated Parmesan and chopped fresh basil.
Place the spicy Italian sausage along the layered fillings, forming a log.
Gently fold the pastry over the filling, rolling it tightly until sealed. Brush the edge with egg wash to secure the seal.
Cut into 1½-inch rolls, place them on the baking sheet, and lightly score the tops.
Repeat the same process with the remaining strip of puff pastry, making more Italian pesto sausage rolls.
Take the second sheet of puff pastry and layer grated cheddar and chopped jalapeño along one edge before placing the regular sausage on top.
Fold, seal with egg wash, cut into 1½-inch rolls, and score the tops.
Brush all rolls with beaten egg and bake for 20-25 minutes, or until the pastry is golden and crispy.
