Marinated Chicken Skewers with Balsamic, Honey, Fig, and Peaches
These marinated chicken skewers are paired with sweet, juicy peaches and a delicious
balsamic, fig, and honey glaze—perfect for grilling and enjoying during the summer.

Ingredients:
For the Marinade:
1/4 cup olive oil
2 tablespoons white balsamic vinegar (regular balsamic vinegar can be used as well)
1 tablespoon honey
1 tablespoon fig jam/preserves
2 cloves garlic, minced
Fresh rosemary, finely chopped
Salt and pepper to taste
For the Skewers:
4 Central Park Farms boneless, skinless chicken breasts, cut into 1-inch cubes
4 large peaches, pitted and cut into wedges
To Serve:
Fresh rosemary and basil, if desired
Instructions:
Prepare the Marinade:
1. In a medium bowl, whisk together the olive oil, balsamic vinegar, honey, fig jam, minced
garlic, chopped rosemary, salt, and pepper.
Marinate the Chicken:
1. Place the chicken cubes in a large resealable plastic bag or a shallow dish.
2. Pour the marinade over the chicken, ensuring all pieces are well-coated.
3. Seal the bag or cover the dish and refrigerate for at least 1 hour.
Prepare the Skewers:
1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
2. Preheat your grill to medium-high heat.
3. Thread the marinated chicken cubes and peach wedges onto the skewers, alternating as
you go.
Grill the Skewers:
1. Place the skewers on the grill and cook for 15-20 minutes, turning occasionally, until the
chicken is nicely grilled and reaches an internal temperature of 165°F (74°C), and the
peaches are slightly charred and tender
To Serve:
1. Arrange the grilled chicken and peach skewers on a serving platter.
2. Garnish with freshly chopped rosemary.
This is an ideal late-summer dish that pairs wonderfully with a fresh garden salad, couscous, or
rice. You can also include additional vegetables like red onions and peppers for extra flavor.
The extra glaze is optional; just marinating the chicken alone is delicious. Nectarines make a
fantastic pairing, and as plums come into season, they'd be a great option to try as well!
For extra depth of flavor, try adding the glaze recipe below. Brush it on towards the end of
grilling or drizzle it over the dish when serving.
Balsamic Honey Glaze
1/4 cup white balsamic vinegar
1 tablespoon honey
2 tablespoons fig jam/preserves
Salt and pepper to taste
1. While the skewers are grilling, combine the balsamic vinegar, honey, and fig jam in a
small saucepan over medium heat.
2. Bring to a simmer and cook for about 5 minutes, until the mixture has thickened slightly.
Season with salt and pepper to taste.
